A three sink unit is the foundational dishwashing station in any commercial food service operation. The three-compartment design provides a structured, hygienic wash-rinse-sanitise sequence that eliminates food-borne pathogens, meets health code regulations and protects customers from contamination.

Unlike a dishwasher, a three sink unit handles the largest items — stock pots, hotel pans, baking trays, cutting boards and kitchen tools that cannot go through a machine. It also serves as a flexible secondary station for thawing, soaking and pre-rinsing.

Apollo's three sink units are manufactured from SS 304 stainless steel at our Sanand GIDC, Ahmedabad facility — with custom dimensions, integrated drainboards, coved basin corners, backsplash panels and pre-drilled faucet holes supplied as standard.

The Three-Stage Cleaning Process

Each compartment performs a distinct, non-interchangeable function. Using all three stages in sequence is what makes the system food-safety compliant.

First Compartment

Wash

Hot water and food-grade detergent for scrubbing and removing food residue, grease and organic matter from dishes, pots, pans and kitchen utensils.

Water temp: 43°C min — Hot enough to loosen food and activate detergent

Second Compartment

Rinse

Clean hot water rinse to remove all detergent residue and loosened food particles before moving to the sanitising stage — critical for chemical safety.

Sanitise

Chemical or heat sanitising solution soak to eliminate bacteria, viruses and pathogens — meeting commercial food safety and health code compliance requirements.
